Sugar Snap Pea Succotash

Ingredients

1(10-oz.)  pkg. fresh sugar snap peas
1(14-oz.)  can corn, drained
1/2cup  sliced cherry tomatoes
6green onions, sliced, divided
3tbsp.  butter, cubed
1tbsp.  chopped fresh parsley

Directions

Preheat grill to high (400°F to 450°F).
Place sugar snap peas, corn, tomatoes, half the green onions, and butter in large bowl; toss to combine. Season with salt and pepper to taste. Transfer sugar snaps mixture to a 9x13-inch sheet of heavy-duty aluminum foil. Fold up edges and crimp tightly to seal.
Grill foil packet 15 minutes or until sugar snaps are tender. Carefully remove sugar snaps mixture from foil to serving bowl. Top with chopped parsley.
