Apricot-Walnut Stuffing

Apricot-Walnut Stuffing

Ingredients

2tsp.  olive oil
1small onion, diced
1carrot, peeled and diced
1stalk celery, diced
3cups  reduced-sodium, fat-free chicken broth
1/2cup  dried apricots, chopped
1/4tsp.  dried thyme
1/8tsp.  black pepper
6cups  herb-seasoned stuffing mix
1/4cup  chopped walnuts, toasted
1tbsp.  chopped Italian parsley

Directions

Preheat oven to 350°F. Coat 2-quart baking dish with nonstick cooking spray.
Heat oil in large nonstick skillet over medium heat; add onion, carrot and celery. Cook, stirring often, until tender, about 8 minutes. Add chicken broth, apricots, thyme and pepper; bring to boiling.
Remove from heat; add stuffing mix, walnuts and parsley; stir to mix well. Spoon into prepared dish; bake 30 minutes or until top is lightly browned.
