Fried Goat Cheese Salad

Ingredients

110.5-oz.  log goat cheese, sliced into 12 (1/2-inch) slices
2egg whites
1cup  bread crumbs
1tbsp.  olive oil
1tbsp.  butter
6cups  mixed salad greens
1pt. grape tomatoes
1/4cup  pine nuts, toasted
1/2cup  vinaigrette salad dressing

Directions

Dip each slice of goat cheese into egg whites and then dredge in bread crumbs. Place cheese slices on baking sheet and chill for 15 minutes
Melt olive oil and butter in a large sauté pan over medium-high heat. Cook goat cheese slices 2 minutes on each side or until browned, but not melted.
Top mixed greens with goat cheese slices, tomatoes and pine nuts. Serve with vinaigrette dressing.
