Camembert and Spinach Polenta

Camembert and Spinach Polenta

Ingredients

3cups  vegetable or chicken broth
1cup  instant polenta
6oz.  ripe Camembert cheese, at room temperature
1cup  chopped baby spinach
1cup  half-and-half
1/8tsp.  ground nutmeg
1/8tsp.  salt
1/8tsp.  pepper

Directions

Bring broth to boiling in large heavy-bottomed pot. Gradually stir in polenta. Cook over medium heat, stirring constantly 2 to 3 minutes or until thick. Remove rind from cheese. Cut cheese into bite-size chunks and stir into polenta. Cook over low heat, stirring constantly until cheese melts, about 2 minutes.
Stir in spinach. Cook 1 minute, stirring constantly. Stir in half-and-half, nutmeg, salt and pepper. Simmer 1 minute. Serve immediately.
