pork tenderloin, cut into chunks | | 8 | green onions or scallions (white and 3 inches of green), finely chopped | | 2 | tbsp.
low-sodium soy sauce |

Directions
 | Prepare rice according to package directions; set aside. |  | In wok or large skillet, heat oil over medium-high heat. Cook garlic and ginger 30 seconds. |  | Add pork, a few chunks at a time, stirring frequently until brown. |  | Add green onions, rice and soy sauce; mix well. |
