Asian Pork Fried Rice

Asian Pork Fried Rice

Ingredients

1cup  brown or long-grain rice
1tbsp.  canola oil
2cloves garlic, minced
2tsp.  peeled, minced gingerroot
1lb.  pork tenderloin, cut into chunks
8green onions or scallions (white and 3 inches of green), finely chopped
2tbsp.  low-sodium soy sauce

Directions

Prepare rice according to package directions; set aside.
In wok or large skillet, heat oil over medium-high heat. Cook garlic and ginger 30 seconds.
Add pork, a few chunks at a time, stirring frequently until brown.
Add green onions, rice and soy sauce; mix well.
