Asian Minted Snow Peas

Asian Minted Snow Peas

Ingredients

1tbsp.  butter or margarine
2tbsp.  slivered almonds
1/2lb.  snow peas, trimmed (about 3 cups)
1tbsp.  sliced fresh mint leaves

Directions

In medium nonstick skillet, melt butter over medium heat. Add almonds; cook and stir 1 to 2 minutes or until lightly browned.
Add snow peas, mint and 2 tablespoons water. Cover and cook 2 to 3 minutes or just until peas are crisp-tender. Season to taste with salt and pepper.
