Artichokes with Mayo Dip

Ingredients

1/2cup  fat-free or reduced-fat mayonnaise
1/2cup  nonfat sour cream
1tbsp.  chopped fresh chives
2tsp.  chopped fresh mint
1 1/2tsp.  lemon juice
1/2tsp.  pepper
4artichokes

Directions

Combine mayonnaise, sour cream, chives, mint, lemon juice and pepper in bowl. Divide sauce into 4 small bowls.
Place 1 inch of water in stainless steel pot with tight lid. Place artichokes, stem side up, in water. Steam prepared artichokes, covered, 30 to 40 minutes. Test by sticking toothpick in stem; it should feel tender.
Drain artichokes, stem side up, and allow to cool. Serve on plates large enough to accommodate an artichoke and a bowl of dip.
