Directions
Preheat oven to 375°F. In medium bowl, stir together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Add milk, a little at a time, stirring until dough clings together. Form into a ball. Divide dough into sixths. On floured surface, roll each portion of dough into a 7-inch circle.
Stir together apples, pecans and 1/4 cup of the sugar. Top each circle with a scant 1 cup apples. Moisten edges of pastry with water; gather edges of dough over top of apple, completely enclosing apple. Pinch to seal. Place, seam side down, in 2-quart rectangular baking dish.
In medium saucepan, combine remaining 2 cups sugar, 2 cups water, butter, vanilla, cinnamon and nutmeg. Bring to boiling. Carefully pour over dumplings. Bake 35 to 40 minutes or until golden brown. Serve warm.
