Layered Nacho Salad

Ingredients


1lb.  lean ground beef and/or ground turkey 
1/4cup  chopped onion 
1(1.25-oz.)  pkg. taco seasoning 
1(8-oz.)  can tomato sauce 
6cups  nacho-flavored tortilla chips, slightly crushed 
4 to 6cups  torn romaine 
1 to 11/2 cups chopped tomatoes 
1large green bell pepper, chopped 
1/2of a medium cucumber, thinly sliced 
2cups  shredded mild Cheddar cheese 
Bottled salsa or sour cream (optional) 
1(2.25-oz.)  can sliced black olives 
 

Directions

  1. In large skillet cook meat and onion until meat is brown. Drain fat. Add taco seasoning. Cook and stir 1 minute. Stir in tomato sauce. Bring to boiling; reduce heat. Cover and simmer 10 minutes, stirring occasionally.
  2. Line individual plates with chips. Spoon meat mixture on chips. Top with lettuce, tomatoes, bell pepper, cucumber and olives. Sprinkle with cheese. Garnish with salsa or sour cream, if desired. Serve immediately.
